Ingredients

Scale

Chicken

  • 4 chicken breasts or thighs, boneless and skinless

Sauce

  • 1 cup fresh cranberries
  • 1 large orange, zested and juiced
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon olive oil
  • 2 garlic cloves, finely chopped
  • 1 teaspoon fresh thyme or rosemary (or 1/2 teaspoon dried)
  • Salt and black pepper to taste
  • 1/2 cup chicken broth or water
  • 1 tablespoon balsamic vinegar (optional)
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Season Chicken: Rub the chicken breasts or thighs generously with salt, black pepper, and your choice of fresh thyme or rosemary. Allow the chicken to rest at room temperature while you prepare the other ingredients. This step helps to infuse the meat with flavor and ensures even cooking.
  2. Cook Chicken: Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 4-6 minutes on each side until the chicken is golden brown and cooked through. Once done, transfer the chicken to a plate and set aside.
  3. Make Sauce: In the same skillet, add the finely chopped garlic and sauté until fragrant, about 30 seconds. Then add the fresh cranberries, orange juice, orange zest, and honey or maple syrup. Let the mixture simmer for 5-7 minutes until the cranberries burst and the sauce thickens slightly.
  4. Finish Dish: Return the chicken to the skillet and pour in the chicken broth. If using, add the balsamic vinegar and Dijon mustard. Scrape the bottom of the pan to release any flavorful bits. Cover the skillet and cook for 10-12 minutes or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
  5. Garnish: Once cooked, serve the chicken topped with the cranberry orange sauce. Garnish with additional fresh herbs or orange zest for extra aroma and color.

Notes

  • Use chicken breasts for a leaner option or thighs for more juicy, flavorful meat.
  • Fresh cranberries are preferred for the best texture and tartness, but frozen can be used if fresh aren’t available.
  • Adjust the sweetness by varying the amount of honey or maple syrup to suit your taste.
  • Adding balsamic vinegar and Dijon mustard is optional but adds a nice depth of flavor to the sauce.
  • Ensure the chicken is cooked through by checking that the internal temperature reaches 165°F (74°C).
  • This dish pairs well with rice, quinoa, or roasted vegetables.
