  • 3 tablespoons tomato paste
  • 46 cups beef broth (6 cups preferred)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • Salt, pepper, and red pepper flakes to taste

Instructions

  1. Prepare the aromatics: Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. Add the diced onion and celery, cooking for 2-3 minutes until softened and translucent. Stir in the minced garlic, cooking another 1-2 minutes until fragrant.
  2. Brown the beef: Add 2 pounds of ground beef to the pot. Cook, breaking it up with a spoon, until no pink remains and the beef is fully browned.
  3. Add vegetables and seasonings: Stir in the diced potatoes, carrots, green beans, tomato paste, diced tomatoes with juices, black-eyed peas, corn, Italian seasoning, smoked paprika, chili powder, and 4 cups of beef broth. Combine everything well. Add an additional 2 cups of broth if you prefer a thinner consistency.
  4. Simmer the soup: Raise the heat and bring the soup to a boil. Once boiling, reduce the heat to medium-low, cover, and simmer for 14-16 minutes, or until the potatoes are fork-tender. Taste and season with salt, pepper, and red pepper flakes as desired.
  5. Serve: Ladle the hot soup into bowls and top with your choice of shredded cheese, sour cream, chopped green onions, cilantro, or crushed tortilla chips. Store any leftovers in an airtight container in the refrigerator for up to 4 days, reheating gently on the stovetop or in the microwave.
