  • 1 1/2 tsp paprika (OliveNation)
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder (OliveNation)
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Pasta

  • 12 oz gluten free farfalle pasta

Sauce

  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese
  • 1/4 cup reserved pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil Pasta: In a large pot, boil the gluten-free farfalle pasta according to package directions until al dente. Drain and reserve 1/4 cup pasta water for the sauce.
  2. Mix Chicken Seasonings: In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper thoroughly to create the chicken seasoning blend.
  3. Pound Chicken: Pound the chicken breasts lightly to even out thickness for uniform cooking.
  4. Season Chicken: Season both sides of the chicken breasts generously with the prepared seasoning mixture.
  5. Heat Oil: In a large skillet over medium heat, heat 2 tablespoons of olive oil until shimmering.
  6. Sear Chicken: Place the chicken breasts in the hot skillet and sear for 5 minutes on each side to develop a golden crust.
  7. Simmer Chicken: After searing both sides, reduce heat to medium-low, cover the skillet with a lid, and cook chicken for an additional 10-12 minutes until internal temperature reaches 165°F (74°C).
  8. Remove Chicken: Transfer the cooked chicken to a cutting board to rest before slicing.
  9. Melt Butter: In the same skillet, add 4 tablespoons butter and let it melt completely over medium-low heat.
  10. Sauté Aromatics: Add dry shallots, garlic powder, and Italian seasoning to the melted butter. Stir well and simmer for 1 minute to release flavors.
  11. Add Flour: Sprinkle gluten-free 1:1 flour into the skillet and stir continuously, scraping the bottom to incorporate and form a roux.
  12. Add Liquids: Slowly pour in the chicken broth followed by the heavy cream, whisking continuously until the sauce is smooth and creamy.
  13. Melt Parmesan: Stir in the shredded Parmesan cheese until fully melted and the sauce thickens.
  14. Adjust Sauce Consistency: Cook sauce on low heat, stirring occasionally, until desired thickness is reached. Add reserved pasta water one tablespoon at a time if the sauce needs thinning.
  15. Toss Pasta in Sauce: Add the cooked pasta to the skillet and toss well to coat evenly with the sauce.
  16. Slice Chicken: Slice the rested chicken breasts into thin strips or bite-sized pieces.
  17. Combine and Serve: Add the sliced chicken to the pasta, gently stir to combine, and serve immediately for the best flavor and texture.

Notes

  • Use gluten-free pasta and flour to keep the dish gluten-free.
  • Reserve pasta water to adjust sauce consistency without watering down flavor.
  • Ensure chicken reaches an internal temperature of 165°F for safe consumption.
  • You can substitute chicken broth with vegetable broth for a lighter sauce.
  • For a lower-fat version, substitute heavy cream with half-and-half, although sauce will be less creamy.
