A delicious Chicken Avocado Melt Sandwich featuring tender grilled chicken breasts layered with creamy avocado, melted cheese, fresh tomato, and red onion on toasted bread spread with a zesty mayo-Dijon mustard blend, grilled to golden perfection.

Ingredients

Scale

Chicken

  • 2 boneless (skinless) chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Condiments

  • 4 slices bread (sourdough, ciabatta, or choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard

For Grilling

  • Butter or olive oil for grilling

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked through and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and lay out the cheese slices. Set aside for assembly.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard evenly on each slice of bread to add flavor and moisture.
  4. Assemble the Sandwiches: On two slices of the prepared bread, layer sliced chicken, avocado, and cheese. Add a few slices of red onion and tomato on top. Cover each with the remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place sandwiches in the skillet and cook until the bread turns golden brown and the cheese melts, about 3-4 minutes per side. Press gently with a spatula to ensure even melting.

Notes

  • You can substitute the chicken breasts with grilled turkey or tofu for a different protein option.
  • Use your favorite cheese for varied flavor profiles—Swiss offers nuttiness, cheddar adds sharpness, and provolone gives a mild creaminess.
  • If you prefer, use whole grain or gluten-free bread to accommodate dietary preferences.
  • Adding a few leaves of fresh spinach or arugula can add a nice peppery freshness to the sandwich.
  • To make it spicier, add a dash of hot sauce or jalapeño slices into the sandwich layers.
