A comforting and easy-to-make Chicken & Stuffing Bake that combines tender chicken breasts with savory stuffing topped with creamy chicken soup, perfect for a quick weeknight dinner or a cozy family meal.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Stuffing

  • 1 box of stuffing mix (approximately 6 oz)
  • 1 cup water
  • 4 tablespoons butter, melted

Sauce

  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking your dish.
  2. Prepare Baking Dish and Chicken: Grease a 9×13-inch baking dish with butter or non-stick spray and arrange the boneless, skinless chicken breasts evenly in the dish. Season each breast lightly with salt and pepper.
  3. Make Stuffing Mixture: In a medium bowl, combine the boxed stuffing mix, 1 cup of water, and melted butter. Stir until all ingredients are thoroughly mixed and the stuffing is moistened.
  4. Layer Stuffing over Chicken: Evenly spread the prepared stuffing mixture over the top of the chicken breasts in the baking dish, covering them completely.
  5. Prepare Sauce and Pour: In a separate bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this mixture evenly over the chicken and stuffing layer in the baking dish.
  6. Bake Covered: Cover the dish tightly with aluminum foil and bake in the preheated oven for 25 to 30 minutes. This helps cook the chicken through and keeps the stuffing moist.
  7. Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes, or until the chicken is cooked to an internal temperature of 165°F and the stuffing is golden brown and slightly crisp on top.
  8. Rest and Serve: Let the bake rest for 5 minutes out of the oven to allow juices to redistribute. Serve warm for a hearty meal.

Notes

  • Ensure chicken reaches an internal temperature of 165°F for safe consumption.
  • You can use low-sodium chicken broth and cream of chicken soup if you want to reduce salt content.
  • For extra flavor, add herbs like thyme or rosemary to the stuffing mixture.
  • Butter can be substituted with olive oil for a lighter option.
  • Leftovers keep well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
