Ingredients

Scale

Meat Mixture

  • 1 ½ lbs ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)

Potato Layers & Sauce

  • 56 medium russet potatoes, thinly sliced (about 1/8 inch)
  • 1 10.5 oz can cream of mushroom soup (or cream of chicken)
  • 1 cup milk

Cheese

  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella (optional, for extra meltiness)

Other

  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat oven: Heat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or butter to prevent sticking.
  2. Cook beef mixture: In a skillet over medium heat, brown the ground beef along with the chopped onion until fully cooked. Drain any excess fat. Stir in the minced garlic, salt, black pepper, and paprika if using, cooking just until fragrant.
  3. Make sauce: In a bowl, whisk together the cream of mushroom soup and milk until the mixture is smooth and creamy.
  4. Assemble casserole – first layers: Place half of the thinly sliced potatoes evenly on the bottom of the prepared baking dish.
  5. Add beef layer: Spread half of the cooked beef mixture evenly over the potato layer.
  6. Add sauce and cheese: Pour half of the soup and milk sauce evenly over the beef. Sprinkle with 1 cup of shredded cheddar cheese.
  7. Assemble casserole – second layers: Repeat the layering with the remaining sliced potatoes, followed by the remaining beef mixture and the remaining sauce.
  8. Top with cheese: Finish by sprinkling with the remaining 1 cup cheddar cheese and the optional 1 cup mozzarella for extra meltiness.
  9. Bake covered: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes to allow the potatoes to cook through.
  10. Bake uncovered: Remove the foil and bake for an additional 15–20 minutes, until the potatoes are tender and the cheese on top is bubbly and golden brown.
  11. Serve: Remove the casserole from the oven and let it rest for 5 minutes before serving to allow flavors to meld and make serving easier.

Notes

  • You can substitute ground turkey for ground beef for a leaner version.
  • If cream of mushroom soup isn’t available, cream of chicken soup works well too.
  • Thinly slice the potatoes for even doneness; about 1/8 inch works best.
  • For extra flavor, sprinkle a little paprika or smoked paprika on top before baking uncovered.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best texture.
