Salmon and Seasoning

  • 1 lb salmon fillet, cubed
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil

Sauce

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 1 bell pepper, sliced
  • 1/2 cup diced onion

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the penne or bowtie pasta according to the package instructions until al dente. Drain the pasta and set aside.
  2. Season and Cook the Salmon: Toss the cubed salmon fillet with the Cajun seasoning, ensuring all pieces are well coated. Heat the olive oil in a large skillet over medium-high heat, then add the salmon cubes. Cook them for about 2–3 minutes on each side until they are browned and cooked through. Remove the salmon from the skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add the diced onions and sliced bell pepper. Sauté over medium heat until the vegetables are softened, about 4-5 minutes.
  4. Prepare the Sauce: To the sautéed vegetables in the skillet, pour in the heavy cream and chicken broth. Stir in the grated Parmesan cheese and simmer gently, stirring occasionally, until the sauce thickens slightly, about 4-6 minutes.
  5. Toss Pasta and Salmon in Sauce: Add the cooked pasta and the salmon cubes back into the skillet with the creamy sauce. Toss everything together carefully to coat the pasta and salmon evenly with the sauce.
  6. Serve: Garnish with fresh parsley if desired and serve immediately for a warm, comforting meal.
