  • 1 tbsp olive oil
  • 1 tsp fennel seeds
  • 1 garlic clove, finely sliced
  • ½ red chilli, finely sliced
  • 1 pointed or hispi cabbage, cut into 6 wedges

Instructions

  1. Heat the oil and fennel seeds: Warm 1 tablespoon of olive oil in a large frying pan or wok over medium heat. Add 1 teaspoon of fennel seeds and cook, stirring occasionally, until the seeds begin to crackle and release their aroma, about 1-2 minutes.
  2. Add garlic and chilli: Add the finely sliced clove of garlic and half a sliced red chilli to the pan. Sauté with the fennel seeds until the garlic turns golden and fragrant, taking care not to burn it.
  3. Add the cabbage: Place the 6 wedges of pointed or hispi cabbage into the pan. It may look crowded, but as the cabbage heats, it will start to wilt and reduce in volume.
  4. Cook the cabbage: Let the cabbage cook for 3-4 minutes, allowing the edges to develop some color. Stir occasionally for even cooking.
  5. Steam-fry the cabbage: Increase the heat to high and pour about 50ml of water into the pan. Cover briefly if possible and let the cabbage steam-fry until the water evaporates and the cabbage is tender but still holds its shape, about 3-5 minutes.
  6. Serve: Transfer the cooked cabbage to a serving dish and enjoy immediately as a flavorful side dish.
