Ingredients

Scale

Brownie Cookies

  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup semi-sweet chocolate chips

Cookie Dough Buttercream

  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat and prepare baking sheets: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent the cookies from sticking.
  2. Make the brownie cookie batter: In a large bowl, whisk the melted butter with the granulated sugar until smooth. Add in the eggs and vanilla extract, whisking until fully combined.
  3. Add dry ingredients: Stir in the cocoa powder, all-purpose flour, salt, and baking soda until you have a thick batter. Gently fold in the semi-sweet chocolate chips for bursts of chocolate.
  4. Shape and bake the cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Lightly flatten each dough ball for even baking.
  5. Bake and cool: Bake the cookies for 10-12 minutes until the edges are set but the centers remain soft. Let them cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.
  6. Prepare the cookie dough buttercream: In a large bowl, beat the softened butter, brown sugar, and powdered sugar together until light and fluffy. Add vanilla extract and milk, mixing until combined.
  7. Incorporate mini chocolate chips: Fold the mini chocolate chips into the buttercream evenly, lending texture and chocolate flavor to the filling.
  8. Assemble the sandwiches: Once the brownie cookies are fully cooled, spread a generous amount of the cookie dough buttercream on the flat side of one cookie. Top with another cookie to make a sandwich. Repeat with the remaining cookies.

Notes

  • Ensure cookies are completely cooled before assembling to prevent melting the buttercream.
  • For a thicker filling, chill the buttercream briefly before spreading.
  • You can use dark chocolate chips instead of semi-sweet for a richer chocolate flavor.
  • Store sandwich cookies in an airtight container in the refrigerator for up to 3 days.
