Ingredients

Scale

Pasta and Meat

  • 16 oz (454 g) rotini pasta
  • 1 lb (454 g) ground beef

Vegetables and Cheese

  • 1/2 cup chopped dill pickles
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onion
  • 1/2 cup shredded cheddar cheese

Dressing

  • 3/4 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tbsp yellow mustard
  • 2 tbsp pickle juice
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain the pasta and rinse it briefly with cold water to stop the cooking process, then set aside to cool completely.
  2. Cook the Ground Beef: In a skillet over medium heat, cook the ground beef thoroughly, breaking it apart as it cooks. Once browned and no longer pink, drain any excess fat from the skillet. Allow the beef to cool slightly.
  3. Combine Main Ingredients: In a large mixing bowl, add the cooled pasta, cooked ground beef, chopped dill pickles, shredded lettuce, diced tomatoes, diced onion, and shredded cheddar cheese. Gently toss to combine all the ingredients evenly.
  4. Prepare the Dressing: In a small bowl, whisk together the mayonnaise, ketchup, yellow mustard, pickle juice, salt, and pepper until the dressing is smooth and well mixed.
  5. Mix Dressing with Salad: Pour the dressing over the pasta mixture and toss thoroughly to ensure every bite is coated with the flavorful sauce.
  6. Chill and Serve: Cover the pasta salad and refrigerate it for at least 30 minutes. Chilling allows the flavors to meld together beautifully. Serve cold or at room temperature as a hearty side or a main dish.

Notes

  • For best flavor, chill the salad for at least an hour before serving to let the dressing soak in.
  • You can substitute ground turkey or chicken for a leaner protein option.
  • If you prefer a spicier kick, add a few dashes of hot sauce to the dressing.
  • This salad stores well in the refrigerator for up to 3 days.
  • Feel free to add extra shredded cheese or pickles to taste.
