Ingredients

Scale

Beef Mixture

  • 1 pound lean ground beef
  • 1 cup chunky salsa

Sauces and Tortillas

  • 1 (10-ounce) can red enchilada sauce
  • 8 (8-inch) flour tortillas (preferred) or corn tortillas

Cheese

  • 1 (8-ounce) package Borden® Cheese Thick Cut Shredded Four Cheese Mexican (about 2 cups)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking and make cleanup easier.
  2. Cook Beef: In a large skillet, brown the ground beef over medium-high heat until fully cooked, breaking it apart as it cooks. Drain off any excess fat, then return the beef to medium-low heat. Stir in the chunky salsa and cook until heated through, then remove from heat.
  3. Prepare Baking Dish: Pour about half of the red enchilada sauce evenly into the bottom of the prepared baking dish to create a flavorful base layer.
  4. Assemble Enchiladas: Warm the tortillas according to the package instructions to make them pliable. Place about 1/4 cup of the beef mixture down the center of each tortilla, top with one heaping tablespoon of shredded cheese, and roll tightly. Arrange the rolled tortillas seam-side down in the baking dish.
  5. Add Sauce and Cheese: Pour the remaining enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining shredded cheese on top to create a delicious cheesy crust.
  6. Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 to 35 minutes until the cheese is melted and bubbly and the enchiladas are heated through.

Notes

  • Flour tortillas are preferred in this recipe for softness, but you can use traditional corn tortillas if desired.
  • Feel free to customize by adding chopped onions, bell peppers, or black olives to the meat mixture for extra flavor.
  • For a spicier kick, choose a salsa with jalapeños or add a pinch of cayenne pepper to the meat.
  • Leftover enchiladas can be refrigerated for up to 3 days or frozen for up to 2 months.
  • Warming the tortillas before assembling helps prevent them from cracking when rolled.
